Sáfránkert Vendéglő Paloznak: distinctive country flavours, charcoal grilling and excellent Balaton wines

Some villages in the Balaton Uplands have a special atmosphere from the moment you arrive. Paloznak is exactly such a place. Old farmhouses, vine-covered hillsides, quiet streets and excellent local wines define the world into which Sáfránkert Vendéglő fitted as one of Paloznak’s most interesting culinary destinations. A place where the appealing flavours of traditional country cooking met the excitement of charcoal grilling and a modern restaurant approach.

Associated with Homola Pincészet, Sáfránkert aimed to be neither an elegant fine-dining restaurant nor a traditional csárda. It chose a more interesting path: creating a country restaurant where carefully selected ingredients, seasonal dishes, a homely setting and good wines formed a natural whole.

The result was a culinary world worth leaving the busiest lakeside routes for, to discover Paloznak’s quieter, charming side.

A true country restaurant with a modern touch

Sáfránkert’s story began in 2015, when Homola Pincészet brought a distinctive hospitality concept to life in central Paloznak. The aim was not simply to open another fashionable restaurant beside Lake Balaton, but to create a kitchen honestly representing country flavours while confidently using the tools of modern gastronomy.

Local and seasonal ingredients always played an important part in Sáfránkert’s cooking philosophy. Fresh vegetables, flavoursome meats, plants from the house herb garden and carefully chosen cooking methods shaped the menu together.

This is the kind of cooking in which a simple vegetable stew or beautifully grilled meat can become memorable. No elaborate embellishment is needed, only good ingredients, expertise and a little creativity.

One of Sáfránkert’s loveliest ideas was that modern restaurant cooking and the world of old-fashioned Sunday family lunches need not be mutually exclusive. Together, the two approaches can produce particularly exciting dishes.

The soul of Sáfránkert: charcoal grilling and open-fire cooking

One of the defining features of Sáfránkert Vendéglő’s kitchen was charcoal grilling and open-fire cooking. Smoke, embers and slow cooking can give meat a distinctive character that is hard to reproduce in an ordinary pan.

One of the most exciting dishes on earlier menus was slow-cooked duck. The meat spent long hours in a smoker before being finished over charcoal to develop the characteristic browned exterior that makes good grilled poultry so appealing.

According to reports, the result was tender meat and delicious, crisp skin. Even the thought of the aroma of meat cooking over embers makes a dish like this tempting.

Alongside grilled dishes, traditional Hungarian food also had a place. Rather than discarding old recipes, the kitchen elevated them with new cooking methods and distinctive accompaniments.

Grilled duck breast: one of Sáfránkert’s memorable dishes

Earlier guest accounts of Sáfránkert were especially complimentary about the grilled duck breast. Duck is an ingredient for which precise cooking makes almost all the difference.

Juicy meat cooked pink beneath beautifully browned skin can be a real treat for poultry lovers. With a carefully chosen vegetable accompaniment and a glass of Balaton wine, it becomes a dish worthy of a special occasion.

Sáfránkert’s earlier menu also featured slow-roasted duck leg with red-wine cabbage and crushed potatoes with onions. This evoked the richer, more comforting flavours of traditional Hungarian cooking.

The two approaches illustrate what made Sáfránkert interesting: it could turn the same ingredient into both an exciting modern restaurant dish and an appealing home-style classic.

Veal paprikash, seasonal vegetable stews and reimagined Hungarian favourites

One of Sáfránkert’s most appealing qualities was always that, alongside modern cooking techniques, its kitchen took traditional Hungarian food seriously.

Earlier menus included, for example, veal paprikash with egg dumplings and cucumber salad with sour cream. Paprika sauce, tender meat, dumplings and fresh cucumber salad recall old family lunches, yet in a careful restaurant kitchen they can become a thoroughly refined experience.

Seasonal vegetable stews also played an important role. Potato stew with saffron and lemon is a particularly exciting example: a familiar Hungarian dish lifted beyond its usual boundaries by saffron’s subtle aroma and the freshness of lemon.

Summer squash stew and layered cabbage also appeared in the earlier restaurant concept. These dishes demonstrate that the simple ingredients of rural Hungarian cooking deserve careful, creative preparation too.

What was most exciting about Sáfránkert’s world was precisely the way its menu could feel both familiar and surprising.

Creative soups and light starters

Earlier food reports suggest that Sáfránkert’s soups and starters also held many pleasant surprises.

Cream of fairy-ring mushroom soup with oyster mushrooms, for example, was singled out as particularly memorable in a restaurant review. The mushrooms’ rich, earthy flavours, the soup’s smooth texture and careful presentation together make an excellent start to a leisurely lunch.

The summer menu also featured cream of fermented cucumber soup. This dish fits perfectly into the more creative side of Hungarian cooking: a familiar tangy, refreshing flavour appearing in an entirely new form.

Tomato salad with artisan mozzarella instead evoked the lightness of Mediterranean cooking. Sun-ripened tomatoes and delicate, soft cheese are exactly the sort of simple combination in which good ingredients make all the difference.

As the seasons changed, these lighter dishes could continually reveal new sides. Sáfránkert’s menu was never about endless choice, but about a carefully assembled, changing selection.

Homola wines: Paloznak in your glass

Wine is one of the most important elements of Sáfránkert’s culinary world. The restaurant is closely connected to Homola Pincészet, a recognised name in Paloznak and the Balatonfüred–Csopak wine region.

Homola wines formed the backbone of the wine list, complemented by selected bottles from other respected local wineries.

In the Balaton Uplands, discovering local wines alongside the region’s food is a particularly rewarding experience. A well-chosen Olaszrizling can accompany lighter dishes beautifully, while a fuller-bodied white or a more characterful red can shine alongside richer meat dishes.

Exploring Homola’s wine world can also be an outing in its own right. The winery has its own wine terrace and shop in Paloznak, where the wines come with views of vineyards and Lake Balaton.

It is worth knowing, however, that the panoramic Homola Borterasz and Sáfránkert in the village centre are two separate locations. The wine terrace is primarily about enjoying wine with a view, while Sáfránkert represents modern country cooking.

Garden dining, a herb garden and genuine Balaton country atmosphere

Sáfránkert is worth discovering for its surroundings as well as its food. One of the restaurant’s biggest attractions is its friendly, green garden, perfectly suited to Paloznak’s peaceful village character.

Earlier guest reports specifically praised the pleasant terrace and the herb garden at the far end. This small detail says much about the restaurant’s culinary approach: fresh herbs mattered not merely as decoration, but as everyday kitchen ingredients.

Sitting in the garden in summer could be especially atmospheric, as the aroma of food on the grill mingled with the scent of fresh herbs.

Sáfránkert’s homely yet carefully considered surroundings suited a romantic dinner, a leisurely lunch with friends or a pleasant family gathering equally well.

This relaxed welcome was precisely what made it special: the restaurant did not seek to intimidate, but to make guests comfortable and eager to return.

Paloznak: one of the Balaton Uplands’ most charming villages

A visit to Sáfránkert also offers an opportunity to explore Paloznak. This small village between Csopak and Lovas has preserved much of the Balaton Uplands’ traditional village landscape.

Carefully restored farmhouses, old stone walls, the church and bell tower create a particularly pleasant atmosphere. Paloznak received the Hild Award in 1998 for preserving its historic village character, showing how much the community values its architectural heritage.

The surrounding vineyards and wineries also define the landscape. The Olaszrizling educational trail, for example, offers an excellent opportunity to get to know the wine region more closely.

If you enjoy quieter outings around Lake Balaton, Paloznak is an especially good choice. Exploring the village, taking a pleasant walk around the vineyard-covered hills and enjoying a glass of local wine can make a thoroughly rewarding programme.

Paloznaki Jazzpiknik and the village’s livelier side

Although Paloznak is essentially a peaceful, romantic village, summer brings a much livelier atmosphere. One of its best-known events is Paloznaki Jazzpiknik, which turns the village into one of the northern shore’s distinctive musical meeting places year after year.

Food, wine and music have a natural connection here. Homola Pincészet’s name is also intertwined with the history of Jazzpiknik, so the world surrounding Sáfránkert was much more than simply a restaurant setting.

During the festival, the village fills with life, and the nearby wineries and restaurants can be particularly atmospheric additions to a musical weekend at Lake Balaton.

The person behind the place

Homola Szabolcs: for whom Paloznak is more than a wine village

Paloznak is a special place in the Balaton Uplands. For Homola Szabolcs, however, it is not simply a beautifully situated village, but an area whose wine and culinary potential he believed in from the outset.

By founding Homola Pincészet, he worked to create a wine-making world that respects the traditions of the Balatonfüred–Csopak wine region while confidently embracing new ideas.

Sáfránkert Vendéglő, opened in 2015, became the culinary continuation of this approach. The aim was to create a country kitchen in which fresh ingredients, charcoal grilling, traditional Hungarian flavours and modern restaurant techniques form a natural whole.

Alongside Sáfránkert, Homola Borterasz and Paloznaki Jazzpiknik also helped put this small Balaton village on the map for increasing numbers of food- and wine-loving travellers.

In Homola Szabolcs’s story, wine, hospitality and a love of Paloznak are parts of the same idea: showing how much value and how many discoveries this special region holds.
