Buborék Csopak: sourdough bread, pistachio croissants and a whole Balaton way of life
There is a place by Lake Balaton where you can choose a bicycle with your breakfast. This is not about eye-catching decoration beside the pastries: Buborék Csopak runs a bakery-bistro, bicycle shop, workshop, bike hire and accommodation in the same building. At Fürdő utca 37., French butter croissants, long-fermented sourdough bread, speciality coffee and cycling around Balaton belong together quite naturally.
Opened in 2021, the venue won the Dining Guide Alternative Restaurant of the Year award in 2024. This says much about Buborék’s role: rather than follow conventional restaurant rules, it has created a distinctive, relaxed yet discerning Balaton meeting place. Its success is evident, but popularity comes at a price: expect queues, premium prices and sometimes hurried service in summer. It is worth knowing why you are coming and when the venue is at its best.
Buborék grew out of an abandoned grocery shop
The story began during the pandemic. Nárai Rita and Penziás Gábor were spending more time in Csopak and realised how difficult it was to find a nearby bakery selling genuinely good bread and French pastries made on site. As keen cyclists, they also missed having a reliable bicycle workshop open at weekends.
For a while, they simply looked at the for-sale sign on the former, unused grocery shop. Then they took the plunge. When Buborék launched in July 2021, it combined exactly the things they themselves would have wanted: good bread, memorable breakfasts, quality bicycles and a friendly meeting place. Accommodation upstairs opened in summer 2022, completing the Bed, Bike, Bread concept.
The name, meaning “bubble”, refers at once to the airy interior of pastries, sparkling-wine bubbles and the protected, peaceful Csopak world in which the idea was born.
How did it become one of Balaton’s well-known breakfast spots?
Buborék does not rely on the nostalgia of an old cake shop. Instead, it demonstrates what contemporary Balaton hospitality can look like when quality ingredients, good architecture and deliberate community-building all matter. According to early reports, up to four hundred breakfasts were served in a day during the summer peak. Guests included locals, hikers, cyclists, families and visitors coming specifically for breakfast.
Professional recognition came in 2024, when the Dining Guide Top 100 Restaurant Guide named Buborék Alternative Restaurant of the Year. The title is neither a Michelin star nor a conventional fine-dining rating. It is more a recognition that the venue has created an independent, workable culinary concept with an important role to play.
Sourdough bread worth a stop in its own right
Bread is one of Buborék’s strongest products. Visitors frequently single out the long-fermented sourdough versions made in its own bakery. A detailed guest account from 2023 rated the semi-brown sourdough particularly highly and even mentioned encountering Buborék bread at two leading Balaton restaurants.
Well-made sourdough is more than a breakfast ingredient. Its browned, thick crust, airy crumb and gently tangy flavour are an experience in themselves. At Buborék, bread also forms the foundation of other dishes, whether avocado toast, a substantial sandwich or a classic egg breakfast.
If you have time for only a short stop, buy a loaf to take home too. It may be the best way to carry something of your Csopak morning into the next day.
Pistachio croissant: the house’s true crowd favourite
If one pastry had to be chosen, the pistachio croissant would be the strongest contender. A 2022 Dining Guide interview tells us that pastry chef Farkas Mónika worked on the special dough with professional support from master pastry chef Enzsöl Balázs. The aim was light, beautifully laminated, airy pastry that would demonstrate on its own how much baking craftsmanship matters to Buborék.
The owners said at the time that guests’ attachment made it almost impossible to remove the pistachio version from the selection. Sweet cream, butter-rich layers and a crisp exterior combine into a genuine breakfast treat. A 2025 We Love Balaton review also praised this pastry, alongside the double chocolate swirl and fruit Danish.
The counter selection may change daily, and popular pastries sometimes sell out. According to earlier information from the owners, if plain croissants remain, it is worth asking specifically whether one can be filled with pistachio cream.
Not just sweets: egg breakfasts and brunch dishes
Buborék is a bakery-bistro, so it is much more than a café serving croissants. Earlier menus and guest accounts featured scrambled eggs, omelettes, a salmon version of Buborék Benedict, avocado toast, granola, porridge and the French-inspired croque monsieur.
The strength of its brunch dishes may lie in bread taking the lead rather than serving as an accompaniment. In a good egg dish, the bakery’s work matters as much as the kitchen’s. The rich combination of smoked salmon, egg and hollandaise, or the crisp, cheesy hot-sandwich character of a croque monsieur, invites a more substantial breakfast.
However, 2026 guest reviews also contain complaints about precision in preparation, particularly doneness and strongly acidic accompanying salad. The menu is therefore best presented as an attractive possibility rather than an experience guaranteed under every circumstance.
Duck-liver-and-pear croissant and other ideas
Guest accounts from 2023 also mention Buborék’s unusual sandwiches. Combinations with duck liver and pear, Serrano ham and smoked salmon show how much playfulness the format allows. Pear’s fruitiness pairs particularly well with the richness of duck liver, while Serrano ham’s saltiness creates a different balance.
I would not automatically regard these as part of the permanent October 2026 offering. Rather, they illustrate Buborék’s previously documented culinary character: this French-style bakery works not only with sweets but also with inventive sandwiches substantial enough to be meals in their own right.
Speciality coffee, sparkling wine and local products
Sparkling wine is part of the name too. Buborék offers not only coffee and breakfast but also wines, sparkling wines and other distinctive drinks. Earlier reports mentioned kombucha and freshly pressed juices, while Hello Hungary wrote about colourful latte variations and selected wines.
Recent guest reviews generally regard coffee quality particularly favourably. Even an overall critical account from January 2026 specifically praised the hot, well-made coffee and house sourdough bread. Products available to buy from smaller producers, such as honey, cordials and chutneys, offer more to discover.
Breakfast among bicycles: Buborék’s design
Buborék’s visual identity is an experience in its own right. Interior designers Bertóty Eszter and Móder Edit linked the bakery and bicycle shop so that bikes became natural, even eye-catching elements of the space. Materials include pale timber, white tiling, exposed concrete and restrained metal structures.
The interior draws on both Mediterranean and Scandinavian inspiration. Olive trees and lavender, a pale colour palette, a curved counter and a fireplace in the centre create a distinctive, instantly recognisable atmosphere. The design does more than look good in photographs: it also ensures that choosing a bicycle, drinking coffee and eating breakfast are not three separate worlds.
However, the carefully designed surroundings come at a price. Buborék’s premium pricing is partly connected with this comprehensive guest experience, and not every visitor feels it is proportionate to the service received.
Bicycle shop and workshop: cycling is taken seriously here
Buborék’s cycling services are not merely decorative. It offers a brand-independent workshop and both conventional bicycle and e-bike hire. According to official information from October 2026, conventional bike hire starts at HUF 6000, and electric bike hire at HUF 12,000.
The currently published hours for the bicycle workshop and shop are Monday and Thursday to Sunday, 8:00–17:00, closed Tuesday and Wednesday. Importantly, these are the listed hours for the cycling department; check the bakery-bistro’s precise daily hours separately before visiting.
Cycling visitors hardly need an explanation of how useful it is to have a bicycle serviced while eating breakfast, then set off on a lakeside ride from a single stop.
Six rooms above the bakery
According to the official website, the accommodation was completed in June 2022 with six rooms upstairs. The modern, restrained design continues here. For overnight guests, simply walking downstairs to the bakery in the morning is an additional attraction.
Accommodation reviews on Booking.com are very favourable, particularly praising cleanliness, furnishings and location. These should not be confused with an independent culinary assessment of the bakery-bistro, however. The accommodation and breakfast venue operate in the same building but provide different services and different guest experiences.
The team behind the Alternative Restaurant of the Year award
Buborék’s success did not depend solely on the owners’ idea. In a December 2024 Dining Guide interview, Berki Dávid, then the bakery-bistro’s manager, discussed the team’s work. He highlighted quality Hungarian eggs, Hungarian organic salad leaves and a kitchen approach that aims not to look complicated but to work with clean, good-quality ingredients.
This explains why an apparently simple egg breakfast can work so well. Good ingredients, consistent presence and precise execution often matter more than a showy innovation. However, a management role documented in 2024 does not automatically mean the team’s composition remained unchanged in autumn 2026.
When should you visit to see Buborék at its best?
A quieter weekday morning is the best idea, when there is time for coffee, a look around the counter and a leisurely breakfast. Feedback suggests summer weekend breakfasts are particularly busy, with queues possible and popular pastries liable to sell out.
It also helps to know the bakery-bistro’s self-service arrangement in advance: orders and payment are usually handled at the counter. This may not suit those expecting a slow, personal café experience with table service. For those wanting quality coffee and pastries quickly, however, it may be convenient.
What do guests say?
In October 2026, the Google listing for the Buborék complex, aggregating several hundred reviews, shows a score of approximately 4.4–4.5/5. Meanwhile, Tripadvisor’s separate restaurant listing shows 3.0/5, but from just eleven reviews. Ittjártam.hu’s single detailed guest review scores 4.8/5. The three figures are not equally representative, and the Google listing does not reflect only the bakery-bistro.
Positive reviews most often mention the croissants, bread, coffee, design and breakfast selection. Negative accounts tend to concern high prices, the hurried atmosphere at busy times and the preparation of certain dishes. The January 2026 Tripadvisor criticism, for example, questioned the eggs’ texture and excessive vinegary salad; a positive report dated 16 October 2026 also mentioned an overly vinegary salad accompaniment.
The feedback therefore suggests not a weak bakery, but a popular venue with serious ambitions where a fast, high-volume operation can sometimes come at the expense of the guest experience.
With a dog, children or a bicycle
Buborék’s Gasztrotérképek listing describes it as dog-friendly, baby-friendly and accessible. The same listing indicates vegetarian options. However, it is worth asking directly about individual allergens, vegan options and the precise rules for dogs indoors. An important distinction: Booking.com’s accommodation listing does not allow pets, so the bakery-bistro being dog-friendly does not mean the upstairs rooms are pet-friendly too.
The building is around two hundred metres from Csopak beach’s main entrance, near the cycle route and railway station. This makes it an ideal intermediate stop during a day of swimming, cycling or exploring the northern shore.
Buborék Csopak: opening hours, address and contact details
Buborék Csopak’s address is 8229 Csopak, Fürdő utca 37. The bakery-bistro’s telephone number is +36 30 555 3436 and its email is buborek@buborekcsopak.hu. The official website is https://www.buborekcsopak.hu/.
The published timetable and a business listing updated in March 2026 give Monday and Thursday to Sunday 8:00–17:00, closed Tuesday and Wednesday, but on the official website these hours appear under the cycling department. Check the bakery-bistro’s actual opening that day before setting off, especially around seasonal changes and public holidays.
The official menu appears on the website as three images whose contents could not be read with sufficient confidence during this research. We therefore do not provide unverified 2026 prices for pastries and brunch dishes.
Worth a taste
Pistachio croissant
Because Buborék is not simply a breakfast spot or an eye-catching architectural project. Bread and pastries provide genuine professional foundations here. Its 2024 Dining Guide award, returning breakfast guests and carefully conceived cycling concept together make it distinctive.
Local tip
A croissant in your bag, a bike for Balaton!
If you are planning a bike ride, start with a substantial breakfast, then take a pastry or sourdough sandwich for the road. You can also hire an electric bike, but arrange this in advance. Ask about the pistachio croissant even if you cannot see it at the counter: the owners previously said that, if plain croissants are available, they can sometimes fill one fresh.
The BalatonEats meal plan
How to put your meal together
- 01Avocado toast on sourdough bread
Its own bread is one of Buborék's most important ingredients, making it a good place to start. Toasted sourdough's gently tangy character and crisp crust provide an excellent base for avocado's soft creaminess. A simple dish with nowhere to hide the bread's quality.
- 02Buborék Benedict with salmon
A featured brunch dish on earlier menus. Poached egg, smoked salmon and rich hollandaise come together, at their best when the yolk is sufficiently soft and the sauce does not overwhelm the other ingredients. It shows what Buborék can do beyond pastries.
- 03Pistachio croissant
Finish breakfast with one of Buborék's best-known specialities. Buttery, flaky pastry, a crisp exterior and a rich pistachio filling. All that is missing is a good espresso. If you were tasting only one thing, this would be my first choice.
