At Hubertus Hof Étterem in Balatonfenyves, steaks dry-aged for 21 days come from Angus cattle raised on the pastures of Nagyberek. Alongside Terra Pannonia beef, the restaurant's own herb garden and distinctive steak selection, 2026 brought fresh momentum: Séfek séfe winner Mikula Patrik took over the kitchen. Elegant country surroundings, intriguing cuts, creative seasonal dishes and special gastronomic evenings on Lake Balaton's southern shore.

Hubertus Hof Étterem in Balatonfenyves: where Nagyberek Angus cattle meet a new chef’s ambitions

There is a restaurant in Balatonfenyves whose story begins long before the menu, out on the pastures of Nagyberek. Hubertus Hof Étterem is one of the southern shore of Lake Balaton’s distinctive culinary addresses: its own Terra Pannonia Angus cattle, 21-day dry ageing, herb garden and peaceful grounds shaded by mature trees together define the place. Here, the beef’s provenance is not a footnote: it is the story itself.

A new chapter opened in 2026. Mikula Patrik, winner of the seventh season of Séfek séfe, took charge of the kitchen, aiming to showcase this exceptional meat in more colourful, contemporary dishes. Hubertus thus retains its rural, slightly hunting-lodge character while seeking its place on Hungary’s new, more adventurous culinary map.

It is not on the waterfront, and that is part of its appeal

Hubertus Hof Landhotel & Restaurant is at 8646 Balatonfenyves, Nimród utca 4., roughly 800 metres from Lake Balaton. Among the buildings in its nearly three-hectare landscaped park, the pace is quite different from the terraces of beachside restaurants. Shady trees, green gardens and country elegance provide the backdrop; the main attraction is what arrives on your plate.

The four-star hotel’s restaurant also welcomes non-residents, so you do not need to book a room or a wellness package to try its food. Anyone looking for a more substantial dinner around Fonyód, Balatonfenyves or Balatonmáriafürdő may find this address worth considering, even for a visit of just a few hours.

From pasture to plate: the Angus really is their own

The different branches of the agricultural business behind Hubertus work together. Beef from Angus cattle raised around Nagyberek reaches the kitchen through the company’s own processing operation and Terra Pannonia brand. The farm contributes other ingredients too: some herbs come from the restaurant’s own garden, while potatoes also form part of its in-house production.

This interconnected operation is Hubertus’s real advantage. The chef does not simply order a good steak: he works with meat whose journey is known from breeding through processing. The restaurant also emphasises a nose-to-tail approach: value lies not only in the best-known, most expensive parts of the animal, but in more unusual and interesting cuts too.

What does 21-day dry ageing add?

One of the restaurant’s defining features is that its Angus beef is dry-aged for 21 days. During this time, the meat loses some moisture while enzymes change its structure. The result can be a more concentrated, deeper beef flavour, sometimes with gently nutty, matured notes.

Dry ageing is not magic on its own, however. The cut, marbling, thickness and correct degree of cooking matter just as much. A good rib-eye can offer a fattier, richer and juicier experience, while onglet or flank has a firmer grain and stronger character, calling for a different approach. Part of Hubertus’s appeal is that it can introduce diners to these differences.

The Angus steak platter for two: an ideal introduction

If this is your first visit and there are two of you, the Terra Pannonia Angus steak selection is a particularly good choice. One of the house’s signature dishes, it presents several cuts together, so you need not decide immediately whether richer, more marbled meat or firmer, more characterful cuts appeal most.

Imagine beautifully seared beef, served sliced: a browned crust formed against the hot cooking surface, with juicy meat inside cooked to your chosen level of doneness. The experience is not just about the first bite. It is also about how the cuts, side by side, reveal the diversity of Angus beef.

The selection’s composition and price can change, and previous menus requested advance arrangements for larger platters. If this is your main reason for visiting, ask about it when booking your table.

Rib-eye, onglet, flank and T-bone: the many faces of beef

The account of Hubertus’s agricultural operation also mentions onglet, flank, T-bone, Porterhouse and Tomahawk steaks. Not every cut will necessarily be available every day, but they illustrate the breadth of its meat-focused offering.

Rib-eye wins people over with its marbling. As the fat melts, it brings full, deep flavour and a succulent texture. Onglet can be a favourite among adventurous steak lovers: pronounced beef flavour, a distinctive grain and little fuss. Flank is at its best sliced thinly across the grain, while T-bone and Porterhouse lead into the world of impressive bone-in steaks.

Dedicated meat lovers have another special option: according to the restaurant, they can choose their preferred cut directly from the steak fridge. Ask your server about each cut’s texture and the kitchen’s recommended degree of doneness.

Mikula Patrik: a new chapter in the Hubertus kitchen

One of the major changes in 2026 was Mikula Patrik’s arrival. The young chef won the seventh season of Séfek séfe in spring and then became head chef at Hubertus Hof. In a June interview, he described the estate’s own Angus herd and associated processing facilities as a particularly attractive professional opportunity. The menu based on his own concept launched on 5 June 2026.

His aim is not to cover country cooking with imported fashions. Instead, he wants to return to Hungarian ingredients and traditions, presenting them through new pairings, brighter details and more playful plating. The kitchen’s ambitions include attracting the attention of the Michelin or Gault&Millau guides. This is an aspiration, not an accolade already earned, but it gives a clear sense of their intended direction.

Angus tartare, Stefánia vadas and fig-inspired surprises

The restaurant’s meat-focused character is particularly clear in its seasonal dishes for 2026. During October’s Füge Feszt, for example, Hubertus offered Angus tartare with figs and Angus Stefánia vadas. At the festival, the tartare came with fig-leaf emulsion and red onion pickled with figs, while the vadas was reinterpreted with potato doughnuts, sour cream and fig chutney with Moroccan lemon.

These details reveal much about the new kitchen’s direction. Fruity acidity, fresh herbs and intriguing textures accompany the beef’s powerful, rounded flavours. It is not that steak is disappearing from the plate. Rather, the other beef dishes alongside it are gaining memorable roles of their own.

The fig dishes were advertised as occasional specials in October 2026 and should not be regarded as promises of permanent menu items.

Nose-to-tail cooking is more exciting than you might think

Hubertus’s gastronomic evenings offer a particularly good insight into cooking that aims to use the whole animal. A five-course Angus dinner advertised for October 2026 includes beef carpaccio and dried beef heart with lángos, wild garlic seed pods, sour cream and Matuzsálem cheese. The main course is fillet steak with smoked celeriac purée, chestnut mushrooms and foie gras; dessert combines arabica coffee, raspberry and pistachio.

The seemingly simple lángos or Hungarian sour cream is not just nostalgic decoration here. It accompanies the depth of the meat and intense aged flavours in a reinterpretation of familiar country cooking. Such menus are interesting precisely because the most expensive steak cut does not always take centre stage.

Important: these are the advertised dishes for the themed dinner on 24 October, not guaranteed items on the regular à la carte menu.

Game, fish and meat-free dishes: not just for steak lovers

Hubertus’s hunting-lodge atmosphere and earlier menus have long been associated with game. Guest accounts also praise pheasant, various soups, duck and veal dishes. This suggests a broader culinary tradition than the steak-led messaging might initially imply.

Meat-free diners need not necessarily miss out on dinner either. A guest reviewing the restaurant specifically in November 2025 mentioned two vegetarian or vegan dishes they enjoyed. The actual choice changes seasonally, however, so enquire ahead if you need vegetarian, vegan or allergen-free meals.

House-made desserts and seasonal patisserie

After a well-chosen steak, all that remains is something to bring dinner to a satisfying close. Hubertus’s own pastry kitchen makes seasonal cakes and pastries, using home-grown ingredients or produce from local suppliers where possible.

The themed menus of 2026 featured Rákóczi-túrós, a Black Forest dessert, panna cotta and a sweet combining coffee, raspberry and pistachio. In early October, a realistic fig-shaped mousse was also advertised, with citrus fig jam and almond sponge. If the chef is working on a seasonal dessert, it is worth choosing that over a familiar classic.

Wine dinners and grill evenings: when the kitchen truly shines

Hubertus is more than a year-round restaurant. Its programme also includes wine dinners, grill evenings, festive baking workshops and special events organised with fellow chefs. At one event in summer 2026, Mikula Patrik and Veégh Attila paired Angus beef and mangalica pork in a multi-course menu.

Anyone seeking a dedicated culinary experience should keep an eye on these occasions. Themed dinners may feature cuts, techniques and flavour combinations absent from the everyday menu. Advance table reservations are generally required for these events.

Elegant country surroundings, with a few important compromises

Hubertus Hof does not trade on panoramic views of Lake Balaton. Its character comes from the park’s mature trees, understated country elegance, hunting-lodge details and unhurried sit-down dinners. It is not somewhere to drop into in flip-flops for a quick lángos between swims. You come here to take your time studying the cuts, choosing wine, talking and perhaps working your way through a multi-course dinner.

The full picture also includes the fact that guest reviews are not unanimous. Many praise the quality beef, pleasant setting and attentive service, while others found the prices too high or the steak insufficiently precisely cooked. One account from 2026 specifically complained that the server had not asked about the desired doneness. At this price level, such details matter.

When ordering steak, state clearly how you would like it cooked and ask for advice on your chosen cut. A good ingredient can only truly shine when the cooking is accurate too.

With children, dogs or a vegetarian diet: what should you expect?

The Hubertus Hof hotel is family- and pet-friendly, with comfortable places to walk and relax in the park. Previous guests have also reported a children’s menu and meat-free options. Dogs must be kept on a lead within the hotel complex and are not allowed in certain areas. Clarify the specific restaurant rules for dogs, particularly indoors, by phone: a pet-friendly hotel policy does not automatically mean access to every room.

Parking is available on the hotel grounds for guests arriving by car. An unusual feature is the meat vending machine in the car park, mentioned by several returning guests: anyone who falls for Terra Pannonia beef can also ask about meat to take home.

The person behind the place

Mikula Patrik: writing a new story with Nagyberek Angus beef

Sometimes a chef looks for a new restaurant. Sometimes an exceptional ingredient finds its chef.
For Mikula Patrik, Hubertus Hof is closer to the second story.
In spring 2026, after winning the seventh season of Séfek séfe, he sought a kitchen where he would not simply carry on an existing menu, but genuinely have the opportunity to realise his own ideas.
Something unusual awaited him in Balatonfenyves: a vast agricultural operation, several thousand Angus cattle, in-house meat processing and ingredients to which few Hungarian restaurants have direct access.
For the chef, who also worked in Austria before his television victory, this was an opportunity to build a new professional chapter at home. He took charge not simply of a four-star hotel's kitchen, but of a restaurant where farming and gastronomy are closely connected.
The menu based on his own concept launched on 5 June 2026.
Patrik wants to return to Hungarian ingredients, traditional flavours and local producers while placing dishes in new contexts. Angus tartare paired with figs and pickled red onion, or his reimagined Stefánia vadas, are good examples.
Nor does the kitchen rely solely on prized steak cuts. A whole-animal approach allows ingredients less often encountered in conventional steakhouses to play exciting roles.
Patrik has expressed ambitious plans: he hopes Hubertus will eventually attract the attention of Michelin or Gault&Millau. Professional recognition, however, takes more than a good ingredient or a television victory. It requires consistent, long-term work.
That is what makes the Hubertus Hof story interesting: the meeting of a country restaurant with solid foundations and an ambitious young chef. We cannot yet know what kind of cuisine will emerge in a few years. But it is certainly worth watching.

Worth a taste

Terra Pannonia Angus steak selection for two

Few restaurants have the resources Hubertus enjoys. Its own cattle herd, Terra Pannonia meat processing, 21-day dry ageing and the kitchen's new creative approach make a rare combination. Here, you do not simply order a steak: you can discover the character and provenance of the beef and the distinctive qualities of its different cuts.

↳

Local tip

The best steak is not necessarily fillet!

Ask your server to show you the meat in the steak fridge and help you choose. A richly marbled rib-eye offers a very different experience from a characterful onglet or flank. Always be precise about your preferred doneness, and ask about the availability of the steak selection for two when booking.

The BalatonEats meal plan

How to put your meal together

  1. 01
    Angus beef tartare

One of Hubertus's most exciting ingredients is worth discovering raw first. Careful seasoning and little acidic touches can bring out the clean, full flavour of the finely chopped beef. The fig version in 2026 was particularly inventive: the fruit's sweetness and pickled onion's freshness provided an excellent counterpoint to the meat.

  2. 02
Terra Pannonia Angus steak selection for two

This is the evening's high point. The browned crust and juicy interior of dry-aged meat, together with the cuts' varying marbling, offer a genuine tasting experience. Take your time: try the slices one after another and notice the different flavours and textures.

  3. 03
Seasonal house-made dessert, ideally the fig mousse

After a rich steak, a fruity dessert with gentle acidity is particularly welcome. The fig mousse offered in autumn 2026, with citrus fig jam and almond sponge, followed exactly that direction. If it is unavailable, ask about the pastry kitchen's current fruit-based special.

What guests say

What stays with guests?

The overall picture from Hubertus Hof guest feedback is clearly positive. Many describe the kitchen as one of the area's outstanding dining experiences, chiefly because of its own Angus beef, careful ingredient sourcing and peaceful setting.
Recurring criticism nevertheless shows that a steakhouse identity brings serious expectations. When a restaurant builds its character around premium meat and its preparation, an overcooked or chewy steak is a much greater disappointment than it would be at an ordinary restaurant.
Overall, Hubertus Hof is a distinctive establishment with strong foundations. Its new chef makes guest experiences from 2026 onwards particularly worth following.

At the time of research, Google's separate restaurant listing showed 4.7/5 from 286 reviews. The Hubertus Hof hotel listing has its own, also high ratings. Google Hotels For the textual analysis, I used public feedback from Google, Tripadvisor, Booking.com, Szallas.hu and Trustindex, along with detailed restaurant accounts on Magyar Vélemények. I did not automatically treat general hotel reviews as assessments of the restaurant. Experiences describing specific meats, service and dishes received greater weight.
